Ingredients

  • 2 Fresh Chicken Breast Fillets, Skinless and Boneless
  • 150g Iceberg Lettuce
  • 2 Medium Capsicum Peppers
  • 2 Red Onions
  • 30g Butter or Low Fat Butter
  • 2 Medium Stalks of Crisp Celery
  • 25g Toasted Almonds
  • 2 tbsp Sultanas
  • 50g Sun-dried Tomato & Chilli Salad Dressing

Preparation/cooking

  1. Dice the chicken into small pieces; finely chop the red onions and peppers.
  2. Melt the butter in pan over a medium heat and add the chicken.
  3. Shred the iceberg lettuce and slice celery.
  4. When chicken is almost cooked, add the peppers and red onions to the pan to soften slightly.
  5. Once the chicken is cooked, drain contents of pan and toss together with lettuce, celery, almonds and sultanas.
  6. Divide equally between 2 plates and drizzle on tomato & chilli salad dressing.
