Ingredients

  • 4 fresh skinless chicken fillets, cut in strips
  • 1 tablespoon plain flour
  • Milled pepper
  • 2 teaspoons oil
  • 1 clove garlic, peeled and thinly sliced
  • 1 onion, peeled and sliced
  • 200g brown rice
  • 1 leek, thinly sliced
  • 1 tablespoon of chopped coriander or parsley.
  • 1 fresh lemon

Preparation/cooking

  1. Season the flour with pepper & coat the chicken in it. Ensure to work the flour well into the flesh.
  2. Heat the oil and sauté the garlic and onion in a pan for 2 minutes over a medium heat. Add the chicken and brown.
  3. Meanwhile cook the brown rice in a pan of boiling water according to the time stated on the packet.
  4. Add the leek and herbs to the chicken and stir.
  5. Cut 4 slices from the lemon and add to the pan. Squeeze the juice from the remainder of the lemon into the pan.
  6. Continue cooking over a medium heat, with the lid on, for about 15 minutes. Add a little water if necessary.
  7. Serve the chicken on a bed of rice, topped with a slice of lemon for decoration.
